HOMEMADE MARSHMALLOW FLUFF

What You'll Need:

  • 3 large egg whites
  • 2 cups light corn syrup
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 2 teaspoons pure vanilla extract

Step-by-Step Guide:

  1. Prep Your Equipment
    Start by ensuring your mixing bowl and beaters are completely clean and dry. Any moisture or grease can prevent the egg whites from whipping properly.

  2. Whip It Up
    In your mixing bowl, beat the egg whites until they form soft peaks. This means when you lift the beaters, the egg whites will hold a shape but with a tip that curls over.

  3. Cook Syrup
    While the egg whites are whipping, combine the corn syrup, sugar, and salt in a medium saucepan over medium heat. Stir until the sugar dissolves and the mixture begins to bubble. Stop stirring and let it cook until it reaches 240°F (soft-ball stage) on a candy thermometer.

  4. Combine
    Once the syrup reaches the right temperature, turn the mixer with the egg whites back on to low speed. Carefully pour the hot syrup into the bowl with the egg whites in a slow, steady stream. Try to pour it between the beater and the side of the bowl to avoid splattering.

  5. Add Vanilla
    Increase the mixer speed to high and continue whipping the mixture for about 7 minutes, or until it's thick, glossy, and has roughly doubled in volume. At the end of the beating time, add in the vanilla extract and whip just to combine.

  6. Enjoy
    Your homemade marshmallow fluff is ready! Use it immediately, or store it in an airtight container at room temperature for up to two weeks.

Tips:

  • Temperature Matters
    Getting the syrup to the correct temperature is crucial. Too low, and your fluff won't set; too high, and it could become too stiff.
  • Clean Tools
    Any residue on your tools can interfere with getting the right consistency, so make sure everything is spotless before you start.
  • Storage
    If you're not using the fluff right away, keep it in a cool, dry place to maintain its texture.
